Elderberry — Sambucus nigra

Deep purple-black berries from the much-loved elder tree, elderberries have a rich history in European folklore and traditional country kitchens. The elder was once regarded as a protective tree, closely associated with household customs, seasonal change and the old hedgerow traditions.

Elderberries have historically featured in cooked syrups, preserves and seasonal botanical preparations. Their distinctive colour comes from naturally occurring anthocyanins, the plant pigments responsible for their rich purple hue.

Ways to use: Thoroughly cooked syrups, preserves and other heated culinary preparations. Not suitable for eating raw or simply steeping in hot water.

Our botanicals: Carefully selected from organic growers and hand-packed in small batches by Hearthwise Herbals.

Traditional correspondences: Jupiter · Pisces · Water
Energetics: Cooling · Moistening

Cautions: Elderberries must be thoroughly cooked before consumption. Raw or inadequately cooked berries can cause nausea, vomiting and diarrhoea. Avoid leaves, stems and unripe berries. Seek professional advice during pregnancy or breastfeeding.
